COLOUR CODED CIDER

Too often, cider is simply categorised as SWEET, MEDIUM or DRY … which overlooks the importance of the vital ingredient – apples. Different apples have different characteristics and produce different ciders, but with over 2,500 apple varieties in the UK alone understanding what’s what could be something of a minefield, so we’ve developed a simple BUSHEL+PECK colour coding system to help you navigate your way. It applies to all our ciders – core range, 500ml Limited Editions and 750ml Limited Editions.

Green labels mean FRESH+CRISP cider, made with eating apples (with perhaps a few cookers); generally simple, refreshing, crisp ciders, but perhaps with some hidden, lingering complexity, for example with our 750ml Cambridge Quoining Limited Edition.

Red labels mean RICH+MELLOW cider, made with cider apples; typical West Country cider, generally with some tannic “oomph”, more complex flavour profiles and some astringency.

Yellow / orange labels mean SMOOTH+SUBTLE perry; generally more refined, with delicate, fruitful flavours and a precise acidic twang. Perry is England’s native wine, often misunderstood and overlooked.

Purple labels mean SLOW+EASY cider, generally made with a blend of eating and cider apples, or with an apple that we think combines those characteristics, such as Brown’s apple. The ciders are refreshing with some understated tannic, astringent flavour.

 

CIDER DONE LOCALLY

We use surplus fruit from local gardens to make our cider – we give free juice or cider in return for apples. Using local surplus apples means less waste, lower food miles, using what’s available locally. Gardens are also an excellent source of unsprayed fruit. We gather fruit from all over the county, from the heights of the Cotswolds in the east to the rolling hills and valleys of the Forest of Dean in the west and the low lying Severn Vale in between. Bushel+Peck is Gloucestershire … bottled.

FRESH+CRISP medium dry cider, made with eating apples, so typical of the way cider is made in the eastern cider-making counties of Kent, Sussex and in East Anglia, etc.

RICH+MELLOW medium dry cider, made with cider apples, so a typical West Country cider, with more complex and astringent flavours.

SMOOTH+SUBTLE medium dry perry, made with a blend of perry pears, with a softer, more delicate flavour profile than cider.

SLOW+EASY medium cider, a blend of ciders made with eating apples and cider apples and given time to mature for a little longer; it has the crisp zestiness of FRESH+CRISP cider blended with the lingering flavour of RICH+MELLOW cider.

Most of our 750ml Bottle Conditioned and Pétillant Naturel ciders are wild fermented and some are aged in old bourbon barrels. Bushel + Peck Courtesan (Painted Lady single variety perry)

Both perries are light, bright and breezy, with the natural sweetness of pears balanced with some acidity. Neither has great tannic “oomph” but both are - in our humble opinion - excellent table perries.

Bushel + Peck Pathfinder (blended perry made with early season perry pears)

“Pathfinder” is so called as it’s made with the first pears we pick, all from one orchard in Great Washbourne, in the very north of Gloucestershire, mere metres away from Worcestershire. “Courtesan” is a single variety perry, made from an attractive - and quite rare - pear called Painted Lady, all the fruit picked form a single tree in an orchard just a mile outside Winchcombe, our home town.
