The pinnacle of hopped cidermaking. Explore our Blue Label range; handcrafted by the founders themselves from press to pack. These ultra premium, limited batch, fine ciders are made using specialist techniques and with only the very best ingredients. All are 100% juice and whiskey cask aged.   7% ABV - Dry 100% Pressed - Goldings Hopped Experience cider as you never have before, Congal Caech's sacrifice to the ancestors brings you a 2019 vintage blend of Yarlington Mill, Redstreak and a dash of fermented Jonagold, matured in oak.   This 7.0%, 300 bottle blend is infused with Goldings hop, imparting honey and spice that compliments the cider base, unlocking a clear and symmetrical flavour profile that is inaccesable to ciders produced commercially. Each bottle is individually batch numbered and sealed with a 29mm crown cap coated in honey-infused wax, our homage to the story of Congal the Blind. Cider delivered in 1x750ml champagne boxes, vintage and bottle numbers are printed; this cider has no best before and will improve with age.   Bottles in series: 300 Year of pressing: 2019

Most of our 750ml Bottle Conditioned and Pétillant Naturel ciders are wild fermented and some are aged in old bourbon barrels. Bushel + Peck Courtesan (Painted Lady single variety perry)

Both perries are light, bright and breezy, with the natural sweetness of pears balanced with some acidity. Neither has great tannic “oomph” but both are - in our humble opinion - excellent table perries.

Bushel + Peck Pathfinder (blended perry made with early season perry pears)

“Pathfinder” is so called as it’s made with the first pears we pick, all from one orchard in Great Washbourne, in the very north of Gloucestershire, mere metres away from Worcestershire. “Courtesan” is a single variety perry, made from an attractive - and quite rare - pear called Painted Lady, all the fruit picked form a single tree in an orchard just a mile outside Winchcombe, our home town.

We make a range of different ciders and perries to accommodate what we hope will provide something for all tastes. Consistent with our non-interventionist philosophy we do not carbonate but produce a sparkling product by bottle conditioning – that is finishing the fermentation process off in the bottle.

Our Sparkling Vintage Cider is made with a high proportion of dessert apples in the mix to give it that delicious ‘méthode traditionelle’ taste.
  The apples are pressed, then fermented twice: first in the barrel for a year; then a second year’s fermentation in the bottle. The cider is then disgorged in the champagne style and aged further before release.  It is the secondary fermentation that gives our cider its wonderful bubbly effervescence; a method invented in the West Country for fine cider making around 1600, well before it was used in France for Champagne.   Our Sparkling Vintage Cider won silver at the 2015 British Cider championships and a 2016 Gold Taste of the West award.   750ml champagne bottles, corked, wired and foiled. 7.5% ABV.

Fine Perry

Our Fine Perry is lightly sparkling and made from Oldfield, Blakeney Red, Huffcap and other varieties of perry pear, specifically bred since the 17th century. Our south-facing orchards on the Atlantic coast of Ireland’s Cork have proven ideal for growing the renowned pear varieties in this bottle. We use wild fermentation, on nothing but juice, completed in bottle in a pet-nat style to allow you to taste the pears in their purest form. This gives a delightful, dry, natural sparkle.

Nightingale Ross on Wye/Nightingale Cider 'Sparkling Collaboration' Fine Cider

A joining of worlds. Ross on Wye’s Dabinett, fermented in Kentucky oak barrels, with its aromatic vanilla, gentle and complex tannins, melded with Nightingale’s Bramley, with bracing acidity and delicious green sourness. We tried a dozen blends, but this one tells a story of East and West, of Kentish and Herefordian cidermaking. Minimum order of 6 bottles.

Fledgling No.2 is a single variety cider made with Red Love apples, a unique red-fleshed apple grown at Gibbet Oak Farm. This cider has aromas of sweet red apples and berries and a flavour profile similar to a dry, acidic white wine. Serve lightly chilled, but not cold. 6.4% ABV | Single variety Red Love cider | 2020 vintage The Fledgling series showcases cider made using the ancestral, or pét-nat (pétillant natural), method. This involves bottling before the end of primary fermentation, allowing the process to complete in the bottle itself. The year 2020 was an incredible vintage for cider and we were compelled to bottle two of our ciders using the pét-nat process.
