Biddenden Ice Cider (2021 Harvest)

Available to purchase from Saturday 30^th April 2022,  Biddenden Ice Cider 2021 – the first of its kind within the Biddenden Cider range. Made from locally grown apples, Biddenden Ice Cider 2021 is an intense, sweet, complex Ice Cider bursting with aromas and reflecting the best characteristics from Kentish grown Egremont Russet and Bramley apples. The apples are pressed on site at Biddenden and then cold settled for 24 hours, leaving a light straw-coloured liquor, which is then frozen. Once removed from the freezer, the juice is allowed to naturally defrost, and a process known as cryoconcentration occurs where the water separates from the natural sugars. The sugar liquor drains slowly from the tanks leaving the water behind, still frozen in suspense resulting in a high natural sugar content, concentrated aromas, and the enhancement of acidity and tannins.

Our take on Calvados.

We took a batch of our cider, matured it for one year and then sent it to 'The Wharf Distillery' in Northamptonshire to be triple-distilled in a copper pot.

40% Volume, clean and mellow with a distinct appliness. Perfect for winter evenings and slow gentle contemplation. It will definitely warm the coldest of cockles.

Deliveries must be signed for by a person aged 18 or over. Drivers operate a challenge 25 policy: if you appear under 25 you will be asked for photo ID.

Local customers you can also collect from the Cidery on Fridays or at other times by appointment with no shipping costs.

Rare Apple Ice Wine

Deep, dark honey colour. Smells intensely of apple and orange peel. Very, very sweet but gloriously burnished acidity sweeps across the palate. Deep, long apricot tang draws through baked apples and honey. Silky viscosity. Long and with a crisp lift on the finish.
