Biddenden Ice Cider (2021 Harvest)

Available to purchase from Saturday 30th April 2022,  Biddenden Ice Cider 2021 – the first of its kind within the Biddenden Cider range. Made from locally grown apples, Biddenden Ice Cider 2021 is an intense, sweet, complex Ice Cider bursting with aromas and reflecting the best characteristics from Kentish grown Egremont Russet and Bramley apples. The apples are pressed on site at Biddenden and then cold settled for 24 hours, leaving a light straw-coloured liquor, which is then frozen. Once removed from the freezer, the juice is allowed to naturally defrost, and a process known as cryoconcentration occurs where the water separates from the natural sugars. The sugar liquor drains slowly from the tanks leaving the water behind, still frozen in suspense resulting in a high natural sugar content, concentrated aromas, and the enhancement of acidity and tannins.

Kentish Cider with a Somerset Twist!

We are proud to introduce our first blend named after one of the family farm Tamworth pigs, Basher. It’s a blend of four apples: Cox, Bramley, Jonagold and Dabinett. We believe it’s the perfect drink for the British sunshine. A medium sweet, lightly sparkling Cider. ABV 5.4%

again the Dabinett is first to reveal in terms of flavour with orange flesh and vanilla bean then those eaters and cookers come through with green apples and elderflower. I feel like I’m mostly getting Dabinett and Jonagold. On taste there is a clash, but ultimately balance of bitterness and acidity. It’s a difficult feat, but both shine through independently before becoming intwined. It leads to a very clean finish, words like “crisp” and “brisk” come to mind, but what do they really mean? It’s refreshing and juicy and not as sweet as I thought it would be, which again, is refreshing.
Hello Dabinett, elements of The Duke here with orange zest, vanilla and brandy. Followed by green apples, honeysuckle and wet nettles. There’s a slightly herby, florally note to it.

The Duke, crafted from the classic bittersweet Dabinett cider apple, is a lightly sparkling, rich, medium dry cider balanced by the delicate astringency of the natural tannin. Our farm at the foot of the North Downs has a native population of fallow deer – The Duke is named after the proud and distinguished Master Buck. ABV 6% Tasting notes by Olly Smith – BBC Saturday Kitchen Bright gold, attractive lemony blossom aroma with a bright lean crisp palate of excellent refreshment.
